The Walnut Breeze

Chopping boards are supposed to be cheap and rustic and fall apart after a few years aren't they? I mean, how much abuse can a piece of wood take in a busy kitchen?  I want my boards to evolve and age, like a red wine, or well made violin. I want my boards to take a beating and survive the rough and tumble of kitchen life. Is that too much to ask? I think not.

This 'Walnut Breeze' is the 3rd variation I've made on the original Oak Breeze. This time I wanted a larger, slightly deeper slab of hardwood for the top made out of another amazingly adapt and dependable species, European French walnut. 

I'm really happy with the result - a real stunner - perhaps too pretty to take a knife to, but this is the life it is destined for otherwise it is only art - and I will have failed. Walnut can take the pain, the cuts and won't scar easily, in fact it will only improve once it's worn in a little.

One year from now I'll post photos of what this board looks like after 12 months under a sharp kitchen knife. It will still be stunning, perhaps even more so with added rustic appeal for anyone who sees the charm of antique wood.
